Chop - Salt - Pack - Wait
Two yummy mouthfuls of mixed fermented veggies can have 5 trillion bacteria with over 600 strains. An entire bottle of probiotics contains only 3 billion bacteria and only 10 strains. Wow.
Root veggies added to cabbage increases the variety of soil-based microorganisms which are missing in our sanitized lives.
Chop, slice or grated vegetable
Lightly salt, (quality salt please) the prepared veggies. (more or less to taste) and pound or squeeze until moist.
Pack the vegetable into a jar, tightly, so that they are forced below the liquid.Add water if necessary.
Wait, taste frequently and enjoy.
You will need at least 4 -5 cabbages to fill 2-3 quart jars. I like to add 1 small grated beet, 1 grated carrot and or 1 cup of chopped red cabbage. Flavouring with caraway seeds optional.
