Orange Creamsicle Dip (vegan)
2 cup Cashews
3/4 cup freshly squeezed orange juice or from concentrate
1/8 cup lemon juice
1 tsp vanilla extract
1 cup melted coconut oil
1 tbsp ginger powder (or 1/2 inch juiced fresh ginger root)
1 tsp Sea salt
1. Soak cashews for 2-3 hours and rinse well.
2. Combine all ingredients in a high-speed blender and process until smooth and creamy. Add water as needed to achieve the desired consistency.
3. May be frozen! Keeps in fridge for 10 days. Serve with our Sesame-Orange Apple Crisps
