Iced Matcha with a kick!

As we endure this heat wave, I don’t want to make supper or even have supper! Too hot for a hot kitchen…My husband tells me that he is not hungry either, so we are good to go to yet another salad.

We enjoy a mix of leafy greens fresh from the garden. The garden offers a choice of lemon balm, mint, basil, dill, radishes and three types of lettuce plus green onions at the moment. We top our salad with soaked and dried walnuts, strawberries, and avocadoes.

I always look for yummy, nutrient-dense calories and decided to mess with one of my favorite hot beverages and turn it into an iced version. I use home-made almond milk, but you can also use coconut milk or open a can of coconut cream. (Coconut cream makes delicious milkshakes btw).

Iced Matcha with MCT Oil, Cardamon and Cayenne.

1 1/2 cups almond milk

1 tsp matcha powder

1 scoop (powdered) MCT oil

½ tsp cardamon

½ tsp ginger

¼ tsp cayenne

1 tbsp liquid honey or stevia.

Blend and pour into a tall glass filled with ice. Enjoy and stay cool out there!
