Zukes and Cukes are easy to grow and inexpensive to buy when in season!
These veggies (from the gourd family) are 94% water and contain trace amounts of electrolytes and Vit C if you eat the skin.
How can you enjoy your seasonal bounty all year round? We like to slice our zukes and cukes and freeze them. Freezing high water content veggies will make them soft and easy to blend into your favourite smoothie recipe.
Slices that are about ½ inch thick work well and pack nicely in a large ziplock bag.

Cucumber Avocado Smoothie
1 avocado (1 cup or 5 oz chunks, fresh or frozen)
1/2 cucumber (1 1/2 cups sliced)
1/2 cup cilantro
1/2 cup water
juice of 1 lime (about 1 TBSP)
pinch of pink himalayan salt
